Fairmont Hotels & Resorts has expanded its UK footprint with the opening of Fairmont Cheshire, The Mere, a countryside resort in northwest England. The property, located on 157 acres of Cheshire countryside overlooking The Mere lake, marks the brand's fourth hotel in the United Kingdom.

The resort offers 116 rooms and suites, with 23 suites among them. Guests can dine at Gordon Ramsay at The Mere, the chef's latest UK restaurant, which serves a British-inspired menu including his signature beef wellington. The restaurant features a private dining room, main seating area, and an outdoor terrace with lake views. A speakeasy-style bar offers premium cocktails.

Other dining options include The Orangery, which serves British afternoon tea by day and transforms into a champagne and oyster bar in the evening. The Club Lounge offers globally inspired dishes alongside Indian-influenced cuisine.

Wellness and Golf Facilities

The Fairmont Spa is housed in a restored Victorian stable block. Facilities include a 20-metre swimming pool, Finnish barrel sauna, ice baths, hammam steam rooms, and salt inhalation chambers. The spa offers 20 treatments, a Technogym with weights area, and a covered outdoor class studio.

For golfers, the resort's championship parkland golf course was originally designed in the 1930s by James Braid and George Duncan. The 18-hole course, set against Cheshire countryside and The Mere lake, is designed to challenge players of all handicaps.

The resort is located just outside the market town of Knutsford, 30 minutes by road from Manchester. The Peak District is reachable in under an hour. Before its £125 million (€146.7 million) transformation into a five-star Fairmont property, the site was known as The Mere Golf Resort & Spa.

This opening comes as the UK's luxury hospitality sector sees continued investment, with resorts increasingly combining golf, spa, and fine dining to attract international visitors. For European travellers, the resort offers an alternative to coastal or alpine destinations, positioning the Cheshire countryside as a weekend getaway from cities like Manchester and Liverpool.
